As with the suckling pig our lamb is personally
selected by the Pugh family. Purchasing only prime English lamb will ensure we can offer traditional grass fed lamb at competitive
prices.
The Lamb is entirely boned, the saddle is then lined with rosemary, garlic and seasoned. Alternatively for
those who do not like garlic we can supply with fresh mint, red onion and seasoning. In the same way as the Pugh's Porchetta
medallions it is then rolled into 4 x 3½ inch diameter rolls, this gives all chefs the ability of producing a consistently
well presented main course, with excellent portion control and a healthy profit margin.
