Giovanni our resident chef has taken his family
knowledge and skill to produce our most popular product within our range. Our Porchetta Medallions are served the length and
breadth of the country in Top London Restaurants, Gastro Pubs, Hotels and also Corporate Events.
Our traditional style medallions are based on
the Rome region style of porchetta and are lined with fresh rosemary, fresh garlic, bay leaves and a little salt and
pepper. Each roll will feed between eight to ten people and when produced each roll is strung to the best portion control
to aid chef's easy ability to see exactly how many portions they will be able to gain out of the roll.
We also supply the medallions plain with nothing added just a little salt and pepper. Pugh's Somerset Medallions are also
a huge hit with people that do not like garlic. These medallions are lined with caramelised apple, 10year old calvados, fresh
nutmeg, fresh sage and bread crumbs to bind.

Pictured left is a whole young pig that has been
made into our porchetta medallions. As you can see each pig makes four rolls also with each whole pig there is a small quantity
of spare meat that we simply cannot fit back into the rolls, this is used to great effect to make other dishes or starters.
